This delicious cold soup recipe should be prepared a day in advance for maximum taste.
- 1 Tablespoon Joy’s ‘Nuff Said Spice
- 2 medium Bell (or Poblano) peppers, de-seeded and diced
- 1 medium onion, diced
- 2 medium tomatoes, diced
- 2 cucumbers, diced
- 2 cloves garlic, diced
- 2 cups olive oil
- 4 cups tomato juice
- 1 -1/2 cups chicken broth
- 1 Tablespoon fresh basil or cilantro, chopped
- Juice of 1 lemon
- Sour cream
Combine ingredients and chill overnight. Prior to serving, top with a dollop of sour cream and garnish with chopped cilantro.
