- 2 tbs peanut oil or salad oil
- 1/2 cup diced cooked ham or spam
- 1/2 cup diced celery
- 1/2 cup chopped mushrooms
- 1/4 cup Joy’s Chile Jam
- 3 cups cold cooked rice*
- 1/2 cup chopped onion
- 4 tbs soy sauce
- 1 egg, beaten
Heat oil on medium to medium high, beat until hot in heavy skillet. Add meat, celery, onion, and saute 5 more minutes. Before serving, add Joy’s Chile Jam, stir and let warm. Enjoy! Serves 6.
*NOTE: Rice should be clean and white. When cooked, the rice should be fluffy and separate. Rise raw rice with cold water until water drained off rice is clear.
