Layered Bean Dip

  • Joy's Chimayo Red Jam16 oz. can refried beans (seasoned)
  • 1/2 jar Chimayo Red Chile Jam
  • 3 avocados
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbs lemon juice
  • 1 package dry taco sauce mix
  • 1/2 cup mayonnaise or salad dressing
  • 1 cup sour cream
  • 1 small can black olives, sliced
  • 3 green onions, chopped
  • 2 tomatoes
  • 1/2 lb colby longhorn cheese, grated

Spread refried beans on large flat serving dish, spread Chile Jam on top of beans. Mash avocados, mix with salt, pepper and lemon juice, spread on beans and jam. Mix taco seasoning mix, mayonnaise, and sour cream, spread on avocado mixture. Top with green onions, tomatoes, black olives, and cheese. Serve with chips. Do not make too far ahead – great for parties!
